What could Tulsans possibly know about wine? Well, apparently we know a lot. Start off with a Sommelier-selected wine flight including Mulderbosch from South Africa, Campolargo from Portugal, Domaine Laroque from France, and Gerard Bertrand 'Grand Terroir' from France. Next, whet your appetite with Beef Tenderloin Nachos pairing perfectly beside the Campolargo red blend, Spinach and Andouille Dip coupled beautifully with the Domaine Laroque, and finally indulge your sweet tooth with Pot de Creme paired blissfully with Domaine La Tour Vieille from the Banyuls region of Southern France.
Since its opening in August 2010, Doc's Wine & Food has evolved into a premiere community gathering place that pairs great wines from around the world with exquisite food. Doc’s has wine, beer, and cocktails to meet even the most discerning taste (even my husband’s), with an ultimate goal of providing people like us with an experience that will have us coming back time and time again.
The only wine knowledge you need at Doc’s to choose your wine is to know your own palate. The menu displays the wines by characteristics, showcasing varietals from around the world. At other restaurants would you have picked Gaba do Xil Godello from Valdeorras, Spain if it did not fall under the category of "Melon, Crisp, Herbal"? What about Domaine Meo-Camuzet Gevrey-Chamertin that falls under "Raspberry, Strawberry, Earth, Smoke"? There's a choice of wine for everyone, from novice to the serious wine aficionado. Of course, my hubby ordered the Stella Artois from Belgium.
You do not need to be a wine connoisseur to be able to come to Doc's Wine & Food and choose the best wine for your table. We found that the unique flavor profile groupings on the wine list made it easy for us to narrow down the wines we would like best. If you still need suggestions for pairing with your meals, simply ask. Doc's staff’s #1 goal is to make your experience so relaxing and enjoyable that you'll be wanting to come back time and time again. I know we will.
Darin Ross started in the hotel industry where he honed his passion for food, wine and cocktail, especially when combined with entertainment. Darin mostly enjoys the people aspect and energy of the restaurant business and can often be seen mingling with his customers.
LAUREN, MANAGER AND CERTIFIED SOMMELIER
After finishing her undergraduate degree at LSU, Lauren Bessette took a break and joined Docs in 2011. With no prior wine knowledge (unless ‘it came out of a box and was cheap!’) or cocktail experience, she found her passion for wine through working at Docs alongside people like Darin, opening up a whole new exciting world. To satisfy her newly found passion, she decided to study wine and become a Certified Sommelier, which she attained this last summer. Her expertise has helped evolve Doc's wine list into one that is unique and diverse.
ROGER, GENERAL AND BAR MANAGER
Roger Byers recently became Doc’s General Manager having started as a bartender in 2013. With his extensive knowledge of bartending attained from working in New York City, he now works closely with Lauren to keep the wine list interesting, finding new and fun wines to add to the list so that the selection does not become stale, but changes regularly for the customers. And he’s a great slicer and dicer too!
TIM, EXECUTIVE CHEF
Tim Richards has created a menu that is perhaps the soul of this restaurant and definitely equal to other up-scale restaurants we've visited in Tulsa. Tim works closely with Lauren & Roger to choose wines to pair with his meals providing the best palate experience possible for their customers. We know this from firsthand experience.
Darin has built an atmosphere that encourages staff ownership and engagement at all levels. Weekly wine sessions held by Lauren, educating the staff on wine regions from around the world, gives the wait staff confidence and gets them excited to interact with the customer about their wine and food pairings. No worries though, even with this new knowledge, the staff remain down-to-earth and are eager to share how wine can enhance the enjoyment of food.
